Celler Casajou 'Els Talls'
"The expression of our vintage."
Els Talls is a combination of the second pressing of both La Caldereta and La Teixonera cuveés. They are co-fermented in stainless steel, and the wine rests in the tanks for a year. A second fermentation is induced using the musts of the following year’s Caldereta and Teixonera harvests. Els Talls rests in bottle for two years before disgorgement.
