Cellers Carol Vallès 'Parellada i Faura'
The Macabeu, Xarel·lo, & Parellada from the 13 hectare estate (32 acres) is hand harvested, fermented in stainless steel, and the resulting wine undergoes a second fermentation in the bottle, where it then ages on its lees for at least 18 months (Reserva) before being desgorged by hand. The current 2021 vintage was aged on lees for 26 months. Parellada i Faura receives 0 dosage, thus qualifying it as Brut Nature, with less than 1 gr/L of residual sugar.
Parellada i Faura is the last name of founder Joan Carol's grandmother Vicenta, who managed the farm alongside her husband, who owned a paper mill. The label itself is a reference to the mill.
Parellada, in addition to being the name of a grape used in Cava production, is also a type of land measurement used by farmers in Catalunya.
