Castell d'Encus, 'Taïka' Sparkling Sauvignon Blanc & Semillon

Hand-harvested and using small boxes of 10 kg, the grapes for this sparkling Sauvignon Blanc & Semillon blend come exclusively from a single estate vineyard. The wine was fermented in small 2500 liter stainless steel tanks. Fermentation was stopped when the wine had enough residual sugar to ensure a second fermentation in the bottle without adding any external sugar. Aged in bottle for 60 months.
Taïka means ‘magical’ in Finnish. Related to the silence and the spiritual moments very present in Lapland and Scandinavian countries. Using the same pronunciation in Japanese, it takes on the meaning ‘new wave’.
